Easy Beef Fajitas

Here's my favorite recipe: Beef Fajitas!!  

I spent a lot of my growing up years in the country of Panama and then later in Tucson, AZ.  I learned to love Mexican food...or Latin foods, I guess. It's like comfort food to me.

All I do:

I throw a small beef roast in the crock pot with some home canned salsa, fresh mushrooms, sliced bell peppers and onions. Season with some garlic. I let it cook for about 10 hours or until its tender enough to fall apart when you poke it with a fork.  Shred it up right before you serve it.

~ Don't add any water, there should be plenty of juices between the meat and the salsa.  In fact, I usually have to drain it a little before I serve it.  (Be sure to keep the broth if you need to drain it.  It makes great beef stock!) ~

Serve with:
  • Tortilla shells (make a salad with tortilla chips for small children.  Not as messy!)
  • Black beans - some may prefer re-fried beans.  I don't like them.  I get a bag of dried black beans and let them cook in a different crock pot.
  • Avocado dip
  • Home canned salsa
  • Sour cream
  • Shredded cheddar cheese
  • Lettuce
Tip:

*IF* I have leftovers (sometimes I make double so I will), I make "cheesy beef burritos" out of it and freeze them to eat on days when I'm out of time, or don't feel like cooking.

That's all there is to it.  Super easy and really yummy!  Hope you like it!
