Zucchini Fritters

I love zucchini fritters!!

All you need:

  • About 2 medium sized zucchinis, coarsely grated
  • Sea salt
  • Ground black pepper
  • 1 large egg
  • 2 scallions, finely chopped
  • 1/2 cup whole wheat flour
  • 1/2 cup sharp cheddar cheese
  • 1/2 cup grape seed oil or olive oil
Directions:

The first and hardest thing to do is to make sure the zucchini is drained.  Especially if it's been frozen.  If your zucchini is not drained enough, your fritters will not work.

Second, whisk egg is large bowl, add zucchini, salt, pepper, scallions, flour and cheese.

Third, heat oil in a large skillet over medium heat. Drop 2 tablespoons of batter into pan.  Flatten slightly.  Allow to cook for 4 - minuets.  Flip once.  Fry the other side for another 4 -6 minuets.  Continue until batter is finished. Sprinkle hot fritters with salt to taste.

You can serve with sour cream or plain yogurt if you like.
