Bread & Butter Pickles

What kid doesn't like pickles?  It's a shame to not make your own when cucumbers grow so easily!  We make all kinds of pickles and relish too!

Everyone knows the best cooks come from the South!!  So, when I wanted to make pickles, I called a friend who lives in Georgia and here's the recipe she shared with me.

World's Best Bread & Butter Pickles:
Makes 4 quarts or 8 pints:

4 quarts of cucumbers - sliced into rings
6 medium white onions - chopped
1 green pepper - chopped
1 red pepper - chopped
3 cloves of garlic - minced
1/3 cup of salt

Prepare all ingredients and mix together.  Put a thick layer of ice {2 - 3 inches} on top of your prepared ingredients and let "soak" for at least 3 hours.

Rinse salt.

In large stock pot mix: 
3 cups distilled white vinegar
5 cups sugar or honey
1.5 tablespoons tumeric
1.5 tablespoons celery seed
2 tablespoons mustard seed
rinsed cucumber mix

Bring to a boil.  Continue boiling until cucumbers change colors.  Put cucumbers into hot jars and seal.

It's that simple! I hope your kids love these as much as mine do!!
