Tuna Salad

Here's my favorite Tuna Salad recipe!  (I made this up in an effort to cram as many veggies into my child as I could.)  This is especially yummy on a hot summer day!

Ingredients:

Using a wooden spoon, mix all ingredients together in a glass bowl.  Store leftovers in fridge.

For a paleo diet, eat with a lettuce leaf rather than bread or crackers.  

I serve sandwiches on Whole Wheat Bread with a piece of lettuce on each slice of bread and the tuna salad between.  (This keeps the bread from getting wet and gooey.)  It's also yummy with tomato and/or avocado.

For school lunches, I usually pack some tuna salad in a small dish with some whole wheat crackers and some string cheese on the side.
