Ingredients:
- Tuna
- Mayo - And I found a recipe to make my own healthy Mayo!!
- Chopped green onion
- 3 Boiled Eggs - chopped
- Cucumber - chopped (optional - I don't always add cucumber)
- Celery Seed
- Whole Wheat Bread or Crackers
Directions:
Using a wooden spoon, mix all ingredients together in a glass bowl. Store leftovers in fridge.
For a paleo diet, eat with a lettuce leaf rather than bread or crackers.
I serve sandwiches on Whole Wheat Bread with a piece of lettuce on each slice of bread and the tuna salad between. (This keeps the bread from getting wet and gooey.) It's also yummy with tomato and/or avocado.
For school lunches, I usually pack some tuna salad in a small dish with some whole wheat crackers and some string cheese on the side.
