Homemade Stove Top Stuffing - No MSG!

My husband LOVES Stove Top Stuffing!  And there are some casseroles that are just so good with it on top!  But, I always feel so guilty as I open the box and pour all that MSG in the pot, and then plop it on their plates.  They don't have a clue what their eating, but I do!  So, shouldn't I do something about it?

That's when I found this recipe.  I tweaked it a bit and here's my final recipe.  {Although I don't really go by recipes, but this is the general idea!}  I'd love to know your thoughts on it!!

All you need to do:

6 cups cubed bread
Preheat oven to 350 degrees.  Spread bread on baking pan.  Bake for 10 - 15 mins.  You will want to turn them to be sure they brown evenly.  After your cubes have cooled, put them in a bag or a large container with a lid.  Add the following to your bread cubes, put your lid on your container and shake until all is well coated:
  • 1 tbsp parsley flakes
  • 3 tbsp chicken-bouillon powder
  • ¼ cup dried minced onion
  • 1 tsp thyme
  • 1 tsp pepper
  • ½ tsp sage
  • 1/3 tsp salt
You can store this Stuffing Mix as it is in the same container you used to mix it! 

When you're ready to cook, simply dice 1/4 cup {or to taste} fresh celery and saute with butter and bit of garlic powder.  And don't try to do without this step...it's soo much better with the celery!! 

Combine the sauteed celery with 2 cups of your stuffing mix, 3/4 cup of water or chicken stock and 2 Tablespoons of butter.  Stir and fluff with a fork until well mixed, but be careful not to over cook!

And now you have a super easy,  very convenient, yummy, no MSG recipe for Stove Top Stuffing!!

  1. Doesn't chicken bouillon powder have msg?

    1. You can get it without MSG in health food stores...or you can do what I do and use chicken stock instead of water when cooking... But you can find chicken bouillon without MSG.

  2. Just make sure the chicken boullion doesn't use one of the 50 different names of MSG..LIKE yeast extract for example.

  3. What are some well known popular MSG-FREE chicken boullion powder or cube brands that you have used and not had a migraine afterward? (When I sat MSG, I of course also mean yeast extract, celery extract, certain proteins that cause migraines, hydrogenated oils, disodium isosinate, disodium guanylate, and the dozens of other similar ingredients)? I am afraid to try homemade soups, gravys etc because they usually include ingredients that cause me to have migraines.

  4. So...how much does this end up making? Recipe calls for 6 cups of cubed bread but in the recipe, you only combine 2 cups of that with the other things? Thanks! Excited to try it without the bouillon (but may add some of the Trader Joe's liquid bouillon in with the celery/broth step.
