Candy Cane Cookies

You'll need a couple of Christmas Elves to chop and pound your candy canes into crumbs, but after that these cookies are pretty simple to make.  To chop the candy, I took the plastic off the candy canes, put them into a plastic zip lock bags, placed the bags between towels {one on the bottom of the bag and one on the top of the bag}, gave each of my "elves" an ice cream scoop or a ladle and let them go to town pounding the candy cane into candy dust.  =)

Ingredients:
1/2 cup softened butter
3/4 cup raw sugar
1/2 cup raw brown sugar, packed
1 egg, beaten
1 teaspoon pure vanilla extract
13/4 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup fresh milk 
1 cup of chopped candy canes
White chocolate chips


Directions:
In medium bowl, beat butter until creamy.  Gradually add sugars.  Add egg and vanilla.  Beat until smooth.

Combine flour, baking powder, and baking soda.  Gradually add sugar to  mixture.  Mix well.  Stir in white chocolate chips and candy cane pieces.

Bake at 375 degrees for 10 - 14 minutes.  Yields about 2.5 dozen.

  2. Visiting from Esther's cookie swap, and these cookies sound really good! I don't eat candy canes plain all that often, but I do like them in other things such as cookies or cakes.
