Grilled Quesadillas

All you need:
  • A skillet
  • 2 small flour tortillas
  • cheese
Directions:

Heat your tortillas in the skillet.  Lay one tortilla in the bottom of the skillet.  Sprinkle with cheese and salsa.  Lay the other tortilla on top of the  cheese and salsa.  Flip the quesadilla when the bottom is toasted a golden brown.  It doesn't take too long.  Be careful not to burn it.  Toast the top (that's now on the bottom).  Serve with sour cream, avocado dip, and salsa.  Yum, yum!  Easy and fun.  I cut mine into quarters or eights with a pizza cutter.

You could also add:
  •  sauteed mushrooms
  • sauteed onions and peppers
  • grilled chicken (or left over chicken)
  • grilled beef (shredded or ground would both work)
  • re-fried beans (for the life of me, I can't figure out why anyone would eat those things!)
Tip: 
If you add other things beside just cheese and salsa, you may want to put half the cheese on the bottom of the tortilla an the other half on the top of the optional ingredients.  That way the cheese melts to the tortillas and the "stuffing" and kinda glues it together.
