Ingredients:
- Sliced Mushrooms. {It's cheaper to buy them whole and do the slicing yourself.}
- Sliced {or diced} Onions
- Sliced Bell Peppers
- Garlic
- Swiss Cheese
- Whole Wheat Buns
- Chicken - Shredded or Boneless, Grilled Chicken Breast
Directions:
Slice your mushrooms, onions and peppers. Add garlic to taste. {We like lots! Gotta keep those vampires away....;) }
Saute in olive oil or butter. Slice your whole wheat buns and spread butter one each. On bottom half of bun, layer shredded chicken, sauteed veggies and last, a slice of Swiss cheese. Place tops and bottoms of buns on a pan and put in the oven. You can bake at 350 until cheese is melted, buns are toasted and chicken is hot. OR, you can put them under the broiler. Which is my personal favorite.
Just don't forget about them like I did once. {In my defense, the baby smelled rather un-lovely.} ;) The food was hardly edible. Actually, it was just hard..or more like chard. I learned a lesson that day: Snow puts fire out! I whipped those things, pan and all, out the door into the snow! I don't recommend running through the house with a pan of flaming food, but all I could think about was the kids catching on fire and I had to get it out of the house! When my husband came home that night, he was greeted with the smell of smoke, and a hole in the snow beside the door with little, round, black, smoldering buns down inside. Oh, well, live and learn... On the bright side; we got to go out to dinner that night! =D
