Sour Cream Enchilada Lasagna

Ok, really, I'm not sure what to call this recipe.  Basically, I took a recipe that we all loved and made it better...and easier.  


Ingredients:
  • Tortilla shells
  • 1 quart size cream of chicken soup
  • 8 ounces of sour cream
  • 1/8 - 1/4 cup chopped hot peppers
  • shredded cheddar cheese
  • chopped green onions
  • shredded chicken
  • chopped olives
  • garlic and sea salt to taste
  • grilled mushrooms - optional

Directions:

Mix sour cream, cream of chicken soup, hot peppers, salt and garlic, and shredded chicken.
Layer Sour Cream mixture, tortillas and shredded cheese like you would a lasagna.  Start with a tiny bit of soup mixture, then tortilla shells, next cheese and start over.  Your last layer should be cheese. 

Sprinkle chopped green onions and chopped black olives on the top.  Bake at 350 degrees until hot throughout.  Easy.  Freezes well.  Completely yummy!!
